Baked Peach French Toast

Got this recipe from Shanelle just yesterday, who got it from the Pampered Chef, and I couldn’t wait to try it.  We made it this morning, and it was really good, but I was using leftover French bread (this easy recipe makes the best French toast), and didn’t quite have enough to get the slices really thick, so a couple places were a little soggy.  Either cut at least 1″ thick slices of bread, or reduce the milk to 3/4 cup (possibly less).

1 pkg (3 oz) cream cheese, softened

enough thick slices of French bread to totally fill a 9X13 pan

1 can (29 oz) peach slices, drained (Shanelle suggested using fresh peaches sweetened w/ sugar)

1/4 cup chopped nuts (I left out)

3 eggs

1 cup milk

1/3 maple-flavored syrup

2 Tbsp butter, melted

1 Tbsp sugar

1 tsp cinnamon

1 tsp vanilla

*Preheat oven to 400.

*Spread cream cheese over both sides of bread slices.  Place bread in 13×9″ baking pan.  Prick bread slices several times.  Top with peach slices; sprinkle nuts over peaches.

*In large bowl, whisk eggs, milk, syrup, butter, sugar, cinnamon, and vanilla.  Pour mixture over bread.

*Bake 20-25 minutes, or until set in center.

    Did you use fresh peached or canned? I can’t wait to (hopefully) pick-up some fresh peaches tomorrow at the Farmers’ Market so we can have this on Sunday. Yummmm!!!
