6 cups cauliflower florets (about 1 head)
1/4 t salt
1/4 t black pepper
2 t butter
Preheat oven to 400. Arrange cauliflower in single layer on baking sheet coated with cooking spray. Coat florets with cooking spray, sprinkle with salt and pepper. Bake at 400 for 25 minutes; turn cauliflower twice.
Melt butter in small skillet over medium heat; cook 3 minutes or until lightly browned. Combine cauliflower and browned butter in a bowl, and toss gently to coat.
**Also tastes great without the butter – just plain roasted with spray, salt and pepper
Serves 4, 1 cup each – (with butter) 53 calories, 2.2 g fat, 3 g protein, 7.5 g carb, 1.3 g fiber
