Buttermilk Refrigerator Rolls

I can’t believe I haven’t posted this earlier – it’s a staple in our house.

Buttermilk Refrigerator Rolls – Breadmaker Version


1 ½ cups buttermilk (room temp)

4-5 cups bread flour

1 ½ t yeast

¼ cup sugar

2 eggs, beaten

1 t salt

¼ cup oil

½ t baking soda


Put the buttermilk, eggs, sugar, salt, oil and baking soda into the bread maker’s pan. Add bread flour, and then yeast. Set to dough setting. When done, take the amount you want, and roll them into balls. Let rise for 1 ½ – 2 hours on a baking sheet (dough straight from the fridge will take longer). Bake at 350 for 10-12 minutes. Brush with melted butter, if you like. The rest of the dough can be stored in the fridge in an airtight container for up to 7 days.

3 cups buttermilk (room temp)

8 cups flour, divided

1 T yeast dissolved in ¼ cup warm water

½ cup sugar

3 eggs

2 t salt

½ cup oil

1 t baking soda


Dissolve yeast in ¼ warm water and let it proof a few minutes. Mix the buttermilk, 3 cups flour, and yeast together thoroughly in a large mixing bowl. Let stand at room temp until double in size, about 2 hours. Add sugar, eggs, salt, 5 cups flour, oil and baking soda. Mix well and kneed for 7-10 minutes. Keep out what you’re going to use right then and put the rest in the fridge for up to 7 days in an airtight container. Let rolls rise on baking sheets until double in size, about 1 ½-2 hours. Bake at 350 for 10-12 minutes. Brush with melted butter if you like.
