Fast Honey Whole Wheat Bread

This is our new favorite.  I changed the recipe to make a loaf in less than 2 hours, start to finish, and it’s so good.  I’ll include directions with and without a bread maker.

BREAD MAKER DIRECTIONS:

Into a breadmaker, add:

1 1/3 c warm water
2 T oil
2 T honey
2 T brown sugar
1 1/2 t salt
2 T gluten
3 1/2 c flour – I use half whole wheat and half bread flour
1 T yeast

Set to “dough” cycle.  When the dough is done, place it in a bread pan, and preheat the oven to 350.  When the oven has preheated, put the bread into the oven, and bake for 30-35 minutes, or until golden brown.

REGULAR DIRECTIONS:

Into a mixer, add 1 1/3 cups warm water, 1 T sugar and 1 T yeast.  Let sit for about 5 minutes, until a bit bubbly.  Then add in:

2 T oil
2 T honey
1 T brown sugar
1 1/2 t salt
2 T gluten
3 1/2 c flour – I use half and half whole wheat and bread flour

Mix with dough attachment OR knead with your hands for about 5 minutes.  Cover and let dough rest 15 minutes, then knead/mix for 5 more minutes.  Let the bread sit, covered, for 1 hour to rise.  Place in bread pan, preheat oven to 350.  When oven has preheated, bake bread for 30-35 minutes.  This gives 1 large loaf, and can easily be doubled (this freezes well).
