If you put too much dressing in the salad and stir it altogether instead of “drizzling” the dressing on, this reminds me a bit of the fruit salads with canned fruit and frosting stuff (ick). So go easy on the dressing and use the left over for fruit dip. The kids love this, love to help make it, and this whole recipe disappears really, really fast. The dressing makes a really good fruit dip on its own.
2 bananas, sliced
2 T lemon juice
2 c shredded romaine lettuce
1 c sliced strawberries or raspberries
1/4 c chopped peanuts (we did without these)
2 T creamy peanut butter
1 T honey
1/2 c vanilla or plain yogurt
2 T orange juice
Combine all ingredients for dressing in a blender and process until smooth.
Toss banana slices in lemon juice, combine the rest of the salad ingredients. Drizzle with dressing.
