Light and Fluffy Pancakes

When we ordered pancakes at a restaurant not long ago, I realized that I’m not a pancake person because I don’t like the heavy, dense ones we end up with at home.  These were light and fluffy like at a restaurant.  Yum.

2 cups milk
1 T lemon juice
1 large egg
3 T melted butter
2 cups flour
2 T sugar
2 t baking powder
1/2 t baking soda
1/2 t salt

Whisk lemon juice with milk and set aside to let thicken.

Whisk dry ingredients together.  Combine egg and melted butter with milk mixture. Combine the wet and
dry ingredients and whisk until just combined – there should still be lumps.
