Spinach Salad with Maple-Dijon Vinagrette

From Cooking Light, March 2008, 8 – 1 1/2 cup servings with 80 calories, 3 g fat, 1 g fiber, 3 mg cholesterol

1/3 cup maple syrup

2 t minced shallots

2 T red wine vinegar

1 T canola oil

1 T country-style Dijon mustad

1/4 t salt

1/4 t black pepper

1 clove garlic, minced

1 cup sliced mushrooms

1/2 cup red onion

1/2 cup shopped apple (Braeburn suggested)

4 bacon slices, cooked and crumbled

10 ozs fresh spinach

Combine 1st 8 ingredients in large bowl, stirring with a whisk.  Add mushrooms and remaining ingredients; toss well to coat.
