Roasted Cinnamon and Honey Glazed Sweet Potatoes

Use the red skinned Yams for this dish. It is slightly sweet, slightly spicy.  I slice them in circles, but they would be great in wedges too.

2 T (1/4 stick) butter, melted

2 T honey

1 T fresh lime juice

1/2 t ground cinnamon

2 pounds red skinned yams, peeled and cut into 1/2 inch rounds

Mango Chutney (get it from the grocery store..not worth making)

Spray a rimmed baking sheet w/ cooking spray.  Whisk honey, butter, lime juice and cinnamon in a large bowl. Add potatoes and toss to coat. Arrange potato slices in a single layer on a baking sheet and bake until tender (about 25 minutes).  Broil for the last few minutes to make the outsides a little bit crunchy.
