Lime Pickled Onions

These sound strange at first, but they are very mild and add a bit of a kick to the Island Pork.  They are also divine on Toasted Brie Sandwiches w/ Mango Chutney or on any other kind of sandwich.   They are easy and yummy and turn a beautiful shade of pink. They also add visual interest to any dish (if you are like me, I sometimes end up with a table full of beige food).

3 T fresh lime juice (you can use the bottled kind..but the fresh really does taste different)

1 T sugar

1 t salt

pinch of black pepper

1 cup red onion, sliced very thin and rings separated

Stir together the lime juice and the sugar until the sugar is dissolved. Add salt and pepper and pour over onions.  I do these in a zip lock bag because of the strong smell of the onions, but a bowl would be fine.  Marinate at least an hour or do it up to a few days early stirring occasionally.  The longer they marinate, the more mild and sweet they will be.
