Jicama Slaw

This is so pretty, and I love pretty food, and especially pretty, fresh food.  Cilantro is also one of my all time favorite herbs.  But.  The limes I uses were especially tart.  I think it would’ve been a lot better if I put a drop of honey in the lime juice and mixed it really well before I poured it over everything else.  I’ll probably try this one more time (I liked it) but Nathan wasn’t a fan, so we won’t see this often in our house.

1 medium jicama, julienned
½ small red onion, halved and thinly sliced
1/4 cup coarsely chopped fresh cilantro
2-3 T fresh lime juice (1-2 limes)
coarse salt and ground pepper

Toss everything.  Serve immediately, or cover and refrigerate up to 6 hours.  Serves 6.
Each serving: 47 calories, .1 g fat, 5.7 g fiber
